A bakery runs on three pieces of equipment: an oven that bakes, a proofer that prepares the dough, and a mixer that builds it. Size every piece of equipment to the same peak demand. If the mixer can build 100 pounds of dough but the proofer only holds 20 sheet pans, the proofer becomes the bottleneck. Match proofer capacity to one or two oven loads, and size the mixer so the largest batch you make fits comfortably. Then add a little margin for holidays and catering orders.
