A food truck is a commercial kitchen squeezed into a box on wheels, and every piece of equipment you add has to fight three constraints: space, weight, and power. Start With the Menu

A burger truck needs a griddle, a fridge, a prep table, and hot holding; a taco truck needs a plancha plus a steam table; a fried-chicken truck needs a fryer with real oil capacity and ventilation to match; a coffee or shaved-ice truck needs almost no cooking equipment but serious cold storage and water systems. Cooking Equipment

The cooking equipment is the heart of the truck, and the fuel choice shapes everything else.

Each cooking appliance comes in propane or electric versions. Propane is the standard for gas cooking on trucks because it is dense energy with no generator required; electric cooking appliances demand serious generator capacity.

Refrigeration and Cold Storage

Cold storage is non-negotiable — health codes require safe food temperatures, and a truck that cannot hold 41°F or below will not pass inspection.

Most truck refrigeration runs on 120V: generator power while you are running, and shore power, battery, or a quiet inverter overnight. Some operators add 12V DC compressor coolers for holding product while driving, which keeps the generator off the road.

Hot Holding

Propane Systems

Propane powers griddles, fryers, ranges, and sometimes the water heater and generator. The system needs DOT-approved tanks (typically two 20 to 40 pound tanks for easy swap-over), a regulator, and rigid or approved flexible lines to each appliance. Tank mounting must be secure and vented to the outside per code, and many jurisdictions limit tank size and placement. Have a licensed installer do the gas work — the health department and fire marshal will both look at it.
